This **Güde Alpha Olive peeling knife, X708/08** is a small peeling knife with a long handle. As such you have the precision of a small blade and the control of a large knife.

 The kitchen knives from the Güde Alpha collection are made from ice-hardened chromium-vanadium-molybdenum according to German tradition. The steel is hardened up to a hardness of approximately 56 HRC. According to Güde this leaves you with the perfect mix between hardness, sharpness retention, ability to sharpen and resistance to chipping. The forged knives are made and sharpened by hand.

 The handles are made from nice olive wood. This is wood that is very hard, also because Güde selected wood that is 100 to 200 years old. As such it can also handle moisture.

Please note that knives are almost always sharpened by hand, even in factories. This value is therefore only an indication of a single tool measured by us.
