The **Tojiro DP chef's knife** is enhanced with an 18 cm blade. As such it is a little shorter than most chef's knives. You can still use the knife for the more demanding tasks in the kitchen, but the tapered tip allows you to work with great precision. The chef's knife is a real all-rounder: you use it to cut meat, fish and vegetables. But also when chopping herbs, crushing peppercorns and peeling garlic cloves.

## 3-layer blade with a core made from VG10 steel

For knives there is always a compromise between hardness (sharp, but brittle and less stainless) and flexible (less sharp and less brittle, more stainless). Tojiro opted for a three-layer construction. The core is made from VG10 steel surrounded by 13-chrome steel. This leaves you with a unique combination of hardness and a much higher corrosion-resistance than with carbon steel.

## Tojiro DP handle

The handle of the Tojiro DP knives is made from black ECO with three rivets. This is a combination of plastic and recycled wood. This is even more sustainable than pakka wood.

Ho acquistato questo coltello alcune settimane fa e lo sto usando praticamente tutti i giorni. Risulta ben bilanciato, dal peso non eccessivo e molto agile grazie alla lama da 18 cm. Ottimo il manico che consente una presa sicura. Filo eccezionale che da grandi soddisfazioni nel taglio della carne ma anche delle erbe da cucina. Per le verdure, invece, utilizzo il nakiri della stessa linea che è anch'esso fantastico. Questo coltello risulta fantastico con la tecnica "rock chop" e, se potessi tornare indietro, lo acquisterei nuovamente! Vale ogni singolo euro, super consigliato!
