The **Eden Sugoi Olive chef's knife** is an incredibly versatile kitchen knife. The 20 cm blade is large enough to carry out almost all daily tasks, but not so large you don't have control over what you do. You use it when cutting vegetables, meat and fish, but also when, for instance, chopping herbs, crushing pepper corns or peeling a clove of garlic. This chef's knife comes in an attractive wooden storage box.

## Eden Sugoi Olive collection

The knives from the Eden Sugoi Olive collection are the basis for any lover of Japanese-style knives. With these knives you can carry out any task in the kitchen! They are incredibly versatile knives that can cut meat, fish and vegetables. The handle feels great in hand thanks to its oval shape. One of the characterizing types of Japanese handles. The olive wood in handle doesn't only look amazing, it is also unique per knife. ## The blade

The blade is made from VG10 steel with a hardness of 58-60 HRC. It is a stainless type of steel with a relatively high carbon content. This means that VG10 steel is a lot harder than most stainless types of steel. As such the edge of the knife is sharper than European knives and it retains its sharpness longer. VG10 steel is known for the fact that is easy to sharpen than, for instance, a Japanese knife made from carbon steel. This is the result of the molecular construction of the steel. We can talk about it for hours, but we won't. The blade of the chef's knife is enhanced with a damascus finish. As such the knife looks amazing. Appearance, after all, also matters! 

The chef's knife from the Eden Sugoi Olive collection is not enhanced with a crop. The advantage is that you can use the entire blade when you use the knife. In addition, the knife is easy to sharpen because the crop won't get in the way as you sharpen from [heel to edge](/en/ct/anatomy-kitchen-knife.htm).

## Maintaining your new chef's knife

If you properly [maintain your new chef's knife](/en/ct/maintaining-a-kitchen-knife.htm) you can enjoy it for years! Like most kitchen knives, the knives from the Sugoi Olive collection are not dishwasher proof. If you put them in the dishwasher you will notice soon enough that the olive wood will be affected by the dishwasher.

It is the result of a combination of the harsh detergent, the heat and the fact that the blades stay damp too long in the dishwasher. As such you damage the wooden handle and the blade can start to rust. It is best to wash and dry them by hand immediately after use. To make sure the olive wood stays in great shape you add oil to the handle.

Bought for a trainee chef who was delighted with it. 

Mooi mes, prima gravering, het is een kado geweest dus ik weet niet hoe het mes snijdt. 

Na jaren met relatief botte messen gewerkt te hebben nu maar eens een echt koksmes aangeschaft. Mijn verwachtingen zijn overtroffen. Zelfs onze lieve heer zou zich snijden aan dit mes. Daarbij moet wel gezegd dat scherpe messen veiliger zijn dan botte. Een genot om mee te werken, en een prachtige duurzame afwerking. Hij komt in een mooie houten doos, waar ik hem ook in bewaar, achter glas in onze keukenkast. Het is een sieraad in onze keuken. Wat de webshop betreft: helemaal niets op aan te merken.

Ik wilde graag een goed koksmes aangezien ik enkel nog een paar goedkope messen had liggen die vanuit de fabriek al onscherp waren en ik altijd te horen kreeg dat een scherp mes een stuk veiliger is dan een bot mes. Aangezien ik de laatste keer met uien snijden niet eens door de ui heen kwam was ik het zat en bestelde ik dit mes. De prijs was netjes en het mes zag er ook nog eens heel goed uit. Na de eerste keer gebruiken was ik direct verkocht! Mega scherp en ook nog eens super fijn in de hand. Ik had nooit verwacht dat een goede ed mes hebben zo'n groot verschil zou maken.
