Hand-forged Japanese Santoku with a  blade length of 18 cm from the Eden Kanso Aogami series. Features a handle that is specially designed for left-handed users.

The **Eden Kanso Aogami santoku** is a versatile Asian kitchen knife to cut meat, fish, vegetables and fish. A great alternative for the chef's knife, lighter and easy to use. Cutting, crushing and scooping. It is all possible with the multi-functional santoku. 

## Blue Paper Steel blade

This 18.5 cm Japanese chef's knife was forged by hand and made from Blue Paper Steel. Blue Paper Steel is White Paper Steel with the addition of small amounts of chrome and tungsten. It might make the steel a little less traditional but it does improve the qualities. Blue Paper Steel is more resistant to corrosion and chipping than White Paper Steel, although it is certainly not a stainless steel type. The knife will namely quickly form a patina. This is an oxidation layer that protects the knife from rust. You can recognize a patina by the discolouration of the surface of the blade. ## Classic Japanese handle

The classic red sandal wood handle is asymmetrical. As such it feels great in hand. The shape of the handle is perfect for left-handed use. This doesn't mean, however that it cannot be used by right-handed users. I will only be a little less comfortable to use.

## Sharpening Eden Kanso Aogami kitchen knives

Don't sharpen these knives in a pull-through sharpener! Because of the rock-solid steel and the sideways movements that occur in a pull-through sharpener pieces of the edge could break off. We therefore advise you to carefully sharpen by hand on a sharpening stone, sharpening steel or with a sharpening system.

This is the worst knife!! I left a few water drops on it and the next day it was rusty already. Horrible, please do not buy. A cheap knife from Amazon that I have had for 2 years is better quality than this.

Preis- Leistungsverhältnis ist gut, allerdings muss man das Messer erst schärfen wenn man es richtig scharf haben will, da hätte ich mir mehr erwartet. 

A real pleasure to use this knife.  Much better value that all those 'damascus steel' knives.  This is all about performance.

Das Messer ist für den Preis sehr wertig. Es kommt recht scharf vom Händler, für viele ist die Schärfe erstmal ausreichend. Liegt gut in der Hand.
