These Japanese knives are hand-forged and made from Blue Paper Steel. Blue Paper Steel is White Paper Steel with the addition of small amounts of chrome and tungsten. It might make the steel a little less traditional but it does improve the qualities. Blue Paper Steel is more resistant to corrosion and chipping than White Paper Steel, although it is certainly not a stainless steel type.

The classic red sandal wood handle is asymmetrical. As such it feels great in hand.

## Sharpening Eden Kanso Aogami kitchen knives

Do not sharpen these knives with a pull-through sharpener. Because of the hardness of the steel and the sideways movements that are made with a pull-through sharpener pieces of the edge can namely break off. That is why we recommend sharpening these knives by hand on a sharpening stone, sharpening steel or with a sharpening system.

Die Messer Schneiden sehr gut. Ich habe die Befürchtung gehabt, dass ich für den harten Stahl (63 HRC) Diamantschleiffer benötigen würde. Aber mein WMF Wasserstein in Verbindung mit einem blauen belgischen Wetzstein schaffen es die Klinge schön zu schärfen.  Mein Wetzstahl macht bei diesen Messern aber keinen Sinn mehr, -zu weich. Kleine Nachteile: 1. Die untere Kante zum Griff hin ist sehr scharf und ungeschützt. 2. Der Stahl fängt schnell Rost. -Nach dem Gebrauch sofort trocknen!

Die Messer wurden sehr schnell geliefert. Sie liegen gut in der Hand umd haben eine exzellente schärfe wie es für japanische Messer sein soll.

Excellent knives which sharpen to a razor edge, filleting chicken becomes a joy. 

En quelques mots, je regrette mon achat...
- fabrication des couteaux mal fini
- Le noir de la lame n'est pas le metal brut mais plutot un type de peinture 
- Odeur chimique très forte sur le manche du couteaux de chef, s'impreigne sur les mains et meme après lavage, l'odeur reste! Impossible de faire partir cette odeur ...
J'ai laver pendant plusieurs jours le manche, rien n'y fait.
- lame au carbonne donc il faut les roder pour supprimer l'ordeur de metal et éviter la rouille qui peut se mettre sur les aliments.



Un rapport qualité/prix exceptionnel pour une telle qualité de couteaux. Légers, équilibrés, affutés à souhait. Le manche japonais est agréable et apporte une excellente prise en main. La dureté de la lame permet un affutage à l'aide des pierres à eau japonaises  qui redonne la précision du neuf en très peu de temps.
Un seul bémol : la lame étant lisse et brut, les aliments collent lors de la coupe.
