## Laguiole en Aubrac Capucin: stainless steel blade

The blade is made from stainless 12C27 Sandvik steel. This is a steel with a relatively high carbon content, making the knife hard as well as razor-sharp. Nevertheless, it isn't a steel that is prone to rust or ugly spots. It's also easy to sharpen if the knife starts to lose some of its sharpness over time.

The handle is made from cactus wood. From the Cholla cactus, to be precise. The Cholla cactus is native to the American Southwest and northern Mexico. It is a soft, almost spongy wood with a special pattern due to the many openings. The Cholla wood is covered with a green synthetic resin to make the material dense, sturdy and attractive.
